Go Forth And Slay!

March 4, 2016 By Michelle Matthews-Calloway Leave a Comment

shareasimageAmandaTaylor46F

So, it’s a new month – and we’re already 4 days in.

YIKES!

Have you predetermined what you want to accomplish this month?

Have you written down some daily goals?

Have you mapped out the actions and steps that will enable you to place a satisfactory “check” next to the tasks you intend to complete?

I believe approaching the month and weeks in an “I’m ready to conquer the world” state of mind is half the battle.

Confidence + action = results.

Let’s go forth and slay!

#291| Funnel Cake & Gator On A Stick

October 18, 2015 By Michelle Matthews-Calloway Leave a Comment

shareasimageGatorOnAStick

“The area was encompassed in a bubble of warm, fragrant steam from the funnel cake deep fryers. It smelled like sweet vanilla cake batter you licked off a spoon.”

―Sarah Addison Allen, The Sugar Queen

This weekend I attended the 79th Annual International Rice Festival in Crowley, LA.

Funnel cake is par for the course at a Festival or State Fair – but gator on a stick?

Well, it is in Louisiana!

And that’s just for starters . . .

#183| Here’s Some Destination Inspiration

July 2, 2015 By Michelle Matthews-Calloway Leave a Comment

shareasimageDEVOTA

It’s Travel Thursday! Time for some destination inspiration.

Today’s photo came from the celebrations for St. Devota, patron saint of Monaco that took place on January 26-27, 2015.

The Visit Monaco website provides the following information about the tradition behind the celebrations:

“According to legend, Devota (Dévote in French) a young Christian woman and native of Corsica, was martyred by the Prefect Barbarus under the Emperors Diocletian and Maximian at a date that we can estimate at between 303 or 304 AD.

During the night, her body was stolen by believers, put in a boat and transported to Monaco, where it was buried in a chapel in a valley known as the “Gaumates,” near the port, on 27 January of the same year.

Under Honoré II, in the 17th century, Saint Devota became patron saint of Monaco.

The tradition has been perpetuated each year since 1874 – a boat is burned on a pyre in the presence of the Sovereign and the Princely Family, accompanied by Monegasque dignitaries.

Once the boat has been burned, fireworks are let off on Port Hercule.

On January 27, the Feast Day, a Mass is celebrated in the Cathedral by the Archbishop of the Diocese, in the presence of the Prince’s Government and numerous elected representatives.  The ceremony is followed by a procession, in which the penitents of the Brotherhood of Mercy take part.”

I’ve been to Monaco, and it’s fabulous!

How To Eat Rabbit Gumbo

October 23, 2013 By Michelle Matthews-Calloway 11 Comments

Anyone who knows me can tell you, gumbo is my favorite thing to eat in the. whole. wide. world.

The. whole. wide. world.

Whelp, a couple of weekends ago I had the distinct pleasure of attending the 24th Annual World Championship Gumbo Cook-Off sponsored by the Greater Iberia Chamber of Commerce.

Imagine the scene: When I came within a mile of Bouligny Plaza on Main Street in downtown New Iberia, I was hit with the wonderful aroma of roux, the rich, dark goodness forming the base of the gumboey goodness to follow.

Closer in, I was engulfed by the sights and sounds of the Festival; crowds slowly gathering, gumbo teams (almost 100 of them) stirring and cooking away when they weren’t carrying on and entertaining the crowd.

photo (6)

The smell of seafood permeated the air: shrimp, crab, oysters – and alligator.

I also had the privilege of serving as one of the judges of the booth decorations, and skits presented by the teams – complete with costumes:

To say that hilarity was the order of the day is an understatement:

MonMon, PawPaw and "TP"

(TP wanted me to zoom in for his closeup):

Once the judging was out of the way and 11:00 a.m. rolled around, it was time to eat and enjoy the gumbo!

Chicken and sausage gumbo, seafood gumbo and exotic gumbos including rabbit, alligator, “green” . . . .

and even gluten-free!

I have to admit that by the end of the day, I’d eaten four bowls of gumbo, taken three bowls home and earned this:

Don’t judge me.

Ahem.

So, you wanna know how to eat rabbit gumbo?

With a spoon, of course!

Jeff Goins’ “Slow Down” Challenge – Day 5 (Final Day)

August 19, 2013 By Michelle Matthews-Calloway 1 Comment

ID-100124233

Image courtesy of Stuart Miles – Free Digital Photos

Friday was the last day of Jeff Goins’ “Slow Down” Challenge. I finished the challenge as scheduled, but after a weekend of dinners out and attending the Delcambre Shrimp Festival (more details on that later this week) I’m just getting around to posting the final installment.

This was Friday’s Challenge:

Challenge: Say “thanks” (for everything)

Today, try saying “thank you” for everything.

Say it to your spouse who makes you wait for dinner. Say it to the cashier who moves too slow. Say it to your late lunch appointment or the call center operator who keeps putting you on hold. Say it to God for every inconvenience that causes you to grow.

Say “thank you.” Don’t just think it or tell it to yourself. Actually speak the words — and mean them.

Be grateful for the moments that slow you down, the ones that cause you to take your time. Use these opportunities to appreciate what you already have and tend to miss. As you do, see how much better life looks, and actually is, when you approach it with gratitude.

I’m happy to say this Challenge was particularly easy for me because I long ago began cultivating the habit of saying “Thank you” for just about everything. I do it so often it has become second nature – and I sometimes even feel self-conscious for saying it because some people seem so surprised when they hear those words.

I do my best to maintain “an attitude of gratitude,” although I’ll be the first to admit it isn’t always easy. Nevertheless, I make a conscious effort to push back feelings of self-pity because I don’t want to be that person:

  • The “Debbie Downer” who always sees the glass half empty – and tries to make everyone else see it that way, too
  • The person you hate to ask “How are you doing” because they’ll probably tell you – and it won’t be anything good
  • The Perpetual Complainer who never seems to be satisfied
  • The Total Ingrate

One has to simply flip on the news or check a Twitter or Facebook feed to realize things could always be worse. There are a million-and-one places we could be (dodging bullets and explosions resulting from civil unrest; on the starving end of a famine, in a country where clean – much less running – water is rare, just to name a few).

For the myriad of things that could be wrong with my life, so much of it is right. For all the things that could be better, so much of it is good.

For this, I am grateful.

And I’m happy to say, “Thank you.”

Join in the Fray: What are you grateful for? To whom do you need to say, “Thank you?”

I participated in and blogged about Jeff Goins’ “Slow Down” Challenge. Thanks for reading, and feel free to comment!
